Yes, you can purchase a 1 day park hopper ticket separately and combine it with reserving a 2 night Disney Resort stay. No, bundling a Disney Resort and park ticket purchase together will not necessarily bring down the price (unless you're able to utilize one of the special offers).
When you book what's considered a Disney World "vacation package", which is a resort room and theme park tickets, it requires a minimum 2 day park tickets. But if you only plan to visit the parks for 1 day, you can book what's called a room only stay... and then just
purchase your park ticket with park hopper option separately. All of your purchases and reservations will be tied together under
My Disney Experience, so it's easy to keep track of.
